2002--visiting daughter at University of St. Andrews, we went for dinner to a small restaurant with a most interesting wine list. White oak leaf being one--it was delightful. I had been making 'country wines' for ~20 years, getting recipes mostly from English wine-making books. Fully intended to make that wine the following spring, but.....life took a different turn (i.e., I returned to the soul-sucking-but-rich life of teaching). Free now, I will think (thanks to your post on the oak) to re-consider making that wine.
I will try to find it--thanks very much for being one of the 'cognoscenti'! My dandelion wine was like a well-aged sherry. I currently (2022, 2021) make elderflower champagne--largely because birds take all the berries--so if I take the flowers I actually get something. My inula helenium wine was SOVEREIGN for a bad cough.
