Frog legs! These are very popular in Mexico. I grew up on the border (McAllen, Texas) and my family went to a very fancy restaurant right across the border. One of the popular menu items was frog legs. You could get them prepared in a variety of ways. The reason we went there is because my parents could afford to take all 7 of us out to a very nice dinner over there. Stateside, it would have been way to expensive at a comparable restaurant.

I can’t wait to learn about your recipes. As always, it’ll be after I finish my editing jobs today!

I have never had Mexican style frog legs! How were they prepared? I sure they were excellent.

You could get them southern fried, of course, but also broiled with lemon rosemary reduction sauce, and the only other I remember is charbroiled. I think there were other preparations, but that's what I can remember. As a child I always loved the fried ones, but as I grew and my tastes became more discerning, my favorite was the lemon rosemary.
